Taco Bowls
Taco bowls are a staple in my home. They’re quick to make, take little effort, and are easily customizable. I have it down to an easy system: rice base + protein+ beans for fiber+ veggies for color + spices for flavor
This mini rice cooker has earned its keep in my kitchen. I’ve had it for years and I’m still loving it! Having a rice cooker makes any rice-based meal so much simpler, you just start the rice and it’s ready when you need it!
Even though this meal is SO GOOD, I still count it in the category of “struggle meals” because it costs less than $10 to make enough for 4 servings.
Here’s the breakdown:
Yellow rice - $7 for a bulk container, using 1 cup uncooked= $0.77
Ground chicken usually costs under $5
Bell pepper (red or orange are my favorite) $2
Bag of kale- $4 for the bag, use 1 cup=0.5 pt $0.80
Can of black beans $1.20
Spices from your cupboard (garlic powder, paprika, chili powder, pepper, salt)
Total cost= $9.77!!!
